European Soldier Beans are well known in early New England times. Long, white with ‘toy soldier’ markings in red at the ‘eye’. Great baker and soup bean. Also known as Johnson and substitutes include the navy.

Suggested Use: The European Soldier bean can replace almost any white bean in recipes. Use in soups, salads and casseroles, mix with diced ham and vinaigrette, serve over lettuce as a refreshing cold summer salad.
Basic Preparations: Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 60 minutes until tender. One cup dry yields 2-1/2 cups cooked.
