Brown rice takes about 45 minutes to cook and develop the nutty flavor. To prepare, rinse the rice and drain well. Place the following in a saucepan: 1 cup of rice, 2 cups water, 1/2 teaspoon salt, and 1 T. butter or olive oil. Bring to a boil, then reduce the heat to low or simmer and cover. Cook for 45 minutes, w/o stirring it or removing the lid. Just before serving, fluff the rice gently with a fork. (Makes approx. 3 cups).
