Jacobs Cattle/Trout Beans are originally from Germany (known as ‘Forellen’). Crisp maroon and white markings. Wonderful in soups.
Ingredients: Jacob cattle beans.
Suggested Use: A flavorful dish or salad is made by simply tossing the cooked beans with olive oil, balsamic vinegar and fresh herbs. Delicious served in stews, casseroles and soups.
Basic Preparations: Soak overnight. Rinse and place in a large pot and cover with fresh water. Bring water to a boil for 3 minutes, reduce heat and simmer, covered, for 35-45 minutes until tender. This bean produces foam, so skim the water regularly. One cup dry yields 2 -3/4 cups cooked.
