Juniper Berries (Juniperus Communis) aren't berries, they are the ripe, dried cones from the Juniper Evergreen shrub. These small bluish purple berries are about 1/4" wide with an intense spicy flavor with a slight overtone of pine. Best known as the flavoring for gin and other liqueurs, Juniper Berries also have many medicinal claims along with their culinary applications, such as arthritis treatment. Juniper berries add a unique flavor to meat dishes, stews, soups, sausages, marinades and in smoking meats. Widely used in the French kitchen. Juniper berry is probably best known as the unique flavoring agent of gin, an important component of the dry martini, a popular intoxicant and putative calmative revered by western culture for over 300 years. As a medicinal remedy, juniper has a long history of use employed as a treatment for numerous diseases by ancient Greek and Arab healers, as well as native American Indians.

Suggested Use: Juniper Berries are thought to stimulate the appetite and therefore should be used sparingly. Most often used with cooking game meat, the berries are used in a marinade or rubbed over the meat before grilling or roasting.

Basic Prep: Juniper berries can be added, whole or crushed, to any soup, sauce, or marinade. A few juniper berries crushed & added to marinades for game gives a wonderful flavor.
