Ground Anise is a spice imported from Asia and Greece, has a mild licorice flavor and is related to dill, fennel and caraway. The seeds are generally removed from the plant and allowed to dry. Anise is a good source of iron and is believed to aid in digestion, and like fennel, a few seeds can be chewed after dinner to freshen the breath and help digestion. It is also used in the making of cough syrups and sore throat medicines to improve the flavor.
Uses: Include cakes, breads, cookies, sweets, spaghetti sauce, Italian sausage, soups, stews, creams and liqueurs. You can also put seeds in the water when poaching fish or shellfish.
